Yeah...

…my grandparents still use lard I believe…or they used to when I was around more often. Also, thanks for the 5:30am links Bill C. These early morning starts are always appreciated by those of us working the night shift or just starting out day too damn early.

One of my guilty pleasures...

…now that I live the blogger/Mr. Mom life, is “The Chew,” a daytime food talk show with Michael Symon, Mario Batali, etc. Symon emphasizes and re-emphasizes that lard is no worse than just about any other fat you can use, and that in some ways it’s even better. Pretty interesting considering its reputation.

I tried that once,

but when I took them out, they defrosted into liquid. It was unpleasant. I guess I should keep them frozen until I start to make it, though?

well, sort of

we (Nuclear Girl and I) found that if you peal the bananas and then freeze them, you get a better situation to handle. I believe there’s less oxidation evolved with the fruit. But, since you mash them up anyways, having them defrost into paste works in your favor.

I really didn't want to get into the pie/cake debate but...

…whipped cream on pecan pie is a no no in my book. However, after seeing the recipe for cashews and pecans with bacon I wonder how bacon in a pecan pie might be?

well, great is my initial thought

I think you’d have to use a pretty large amount, or something with a heavier smoke flavor for it to really stand out though.

Bourbon of course works well in there, and you don’t need much, just a tablespoon or two strikes a nice balance.

The part in that recipe about toasting and grinding the pecans is it’s best attribute.

I always use bourbon in my pecan pie.

Bourbon in anything works for me. Bourbon and bacon would have to be great. I never think about grinding the pecans but have eaten one done that way and it was very good.

I tried bacon cookies once with very unsatisfactory results.

Which claim lard is perfectly healthy, while something like cottonseed oil shouldn’t even be considered edible. When the lab takes something vaguely benign and makes it shelf stable, then you have to look all over again and figure out what the new, shelf-stable chemicals will do to your body.

Another thing P&G did

before you go running to pie, which makes you eat fruit to get to a minuscule amount of lard

YELLOW LARD CAKE
1 1/4 c. lard
2 1/2 c. milk
2 1/2 tsp. vanilla
5 1/2 c. sifted cake flour
2 1/2 tbsp. baking powder
3 1/8 c. sugar
2 1/2 tsp. salt
5 eggs, unbeaten
Put lard in mixing bowl; add 5 tablespoon milk and vanilla. Beat 2 minutes on mixer at medium speed, or until light and fluffy. Sift together flour, baking powder, sugar and salt. Add to lard mixture with 2/3 of remaining milk. Beat until smooth with mixer at medium speed, about 4 minutes. Add remaining milk and eggs. Beat until smooth, 3 minutes. Pour in greased and floured 12 1/2 × 18 inch pan. Bake at 350 degrees 35 to 40 minutes. Makes 54 (2 inch) squares. Cool and frost.

Yeah, so instead of a little slice of Utopia, you could have a whole piece.

Quick question. . .

I seem to recall reading on here before that the statistical difference for home-away splits in basketball was that the home team got more foul calls and shot more free throws. In other words, the home-court advantage consists of fans influencing the refs. If that’s the case, and (as the Basketball Prospectus article says) the home-away advantage in the Big 12 is more pronounced than in any other conference, isn’t that proof that Big 12 refs are less reliable and more easily influenced than any other Division 1 refs? I usually chalk fans complaining about the officiating to sour grapes, but there may actually be something here.

Yeah, he also worked in norman for 1 or 2 years and gew up in Arky

So, of course fans always bring up those 3 schools as his favorites, or they say he’s too hard on them.

It’s to be expected – they generally break their news down for the lowest common denominator, and that’s what they get.

I told a Steelers fan good luck with Haley, he’s had his ups and downs and still has a lot to prove, but hopefully coming ‘home’ to Pittsburgh with a stable front office and a calm head coach will help him to find his niche. His response was to call me an a—clown and say that he only didn’t succeed because he’s never had any good players. When I pointed out the Warner to Fitzgerald/Boldin/Breaston combination that he had success with, he and about 8 others flipped out and tried to argue that they were nowhere near the combination of Wallace/Brown/Sanders, including people telling me to go f—- myself and the original poster saying Steve Breaston wasn’t in the league anymore. How do you have any discussions with people like that?

My synopsis of last night:

We got the pros and cons of being a #4/22-2 team on the road. The worst thing about it is you get everybody’s best shot, and in the case of both of the OK schools, they shot out of their minds comparatively. We also got a boost from the standpoint of their free throw shooting – it seemed they were so jacked up for the game that calming down to take a free throw was tough.

Hangover from kU was certainly a factor. Playing on the road in the Big 12 was a factor. I’m glad we still pulled out a win. Time to gear up for Baylor now.

I heartily agree with your first paragraph

now that we’re running with the top dogs, we’re going to get everybody’s best shot, especially on the road. Fortunately for us, two of our three remaining road games are against the two worst teams in the Big 12 (TAMU will always scare me, though).

We will not lack motivation to take KSU and OSU to the woodshed (or woodchipper, a la Mitch Holthus) at Mizzou Arena.

Here’s how I would classify our remaining games:

Definitive dog: @ku
Toss-up (ish): Baylor
Trap games: @TAMU, ISU (they’re getting better and better, and they know the formula that gives us trouble)
Should be solid wins: KSU, OSU, @TT

It’s phenomenally fun to say that a 26-5, 13-5 season would be a disappointment. Based on what we know right now, that’s our worst case scenario, IMO. If we play up to our potential, 15-3 is a real possibility.

What an awesome season.
