Rack M Nation: Patriotic Cooking

We are in the full swing of summer. The grass needs mowing weekly (or more often if your yard hates you as much as mine hates me), the grills are getting use almost daily and Independence Day is just around the corner. I don't have much to talk about today (I'm planning a festive 4th related post next week) so lets do a community share. What is your favorite recipe/dish this summer? What have you had, made or seen that everyone else needs to know about?
