Apple Butter, Pumpkin Butter, Your favorite pie, Pumpkin beer, all these are amazing things that just taste a bit better once the temp starts to fall and there is a bit of a crisp in the air. Let me share a few of my favorite fall type recipes for all of you food loving fools and please share your favorites in the comments.
Pumpkin Cream Cheese Muffins
These really have everything I need in a diet: pumpkin, cream cheese and cinnamon. Mmmmm, I love me some cinnamon.
Brownie Pumpkin Pie
Settle down everyone! I know what you're thinking, pie and brownies all in one concoction is just insanity. Well, it is. Delicious, fattening, fall on your face insanity!
Pumpkin Cinnamon Rolls
Mmmmm, more delicious cream cheese on top of a fluffy and flaky cinnamon roll. I am drooling like a large breed dog in the hot sun. I need an IV!
Boozey Apple Sauce
Its apples, its cinnamon, its bourbon, its more booze on top of that. Mmmmm, booze and apples are two of my favorite things to ever grace this planet. I'm like Johnny Apple Drunk. In fact, I wish I could change my screen name to that.
Apple Butter Pork Roast
Season a pork roast with salt and pepper. Cook in crock pot on high until tender.
Sautee 1 large clove of garlic in approximately 2 tablespoons of olive oil. Add equal parts of apple butter and water. Cook until reduced to gravy consistency.
Cut or chunk pork roast and put on top of rice or egg noodles. Spoon sauce on top. Enjoy!!!
Apple Butter Knuckle Sandwiches
These here are a true family recipe. You should really only use my family's home made apple butter with this. Other apple butter is crap, flat out crap!
6 T butter or margarine
1/4 c sugar
1/4 c packed brown sugar
1 egg
1/2 t vanilla
1 1/2 c all-purpose flour
1/2 t baking powder
1/4 t salt
Filling:
1/3 c apple butter
3 T chopped pecans or walnuts (optional)
Topping:
1 T sugar
1/4 t ground cinnamon
In a large mixer bowl, beat butter with electric mixer on medium speed till softened (about 30 seconds). Add the 1/4 cup sugar and brown sugar and beat until fluffy.
Add egg and vanilla and beat well.
Combine flour, baking powder, and salt. Gradually add flour mixture to butter mixture, beating well. Cover; chill 1 to 2 hours or till firm enough to roll out.
Preheat oven to 375 degrees. On a lightly floured surface, roll out dough into a 12" square. Cut into 3" squares.
Spread about 1 teaspoon of the apple butter down the middle of each square. if desired, sprinkle about 1/2 teaspoon chopped nuts over apple butter.
Fold one edge of the dough over the filling. Fold over the other edge. With a pancake turner, carefully lift cookies onto ungreased cookie sheets.
With a knife, make 3 cuts halfway through the dough on one long side of each cookie. Bend the cookie slightly to separate the cuts. Combine the 1 tablespoon sugar and the cinnamon; sprinkle over cookies.
Bake at 375 degrees for 8-10 minutes or till golden. With pancake turner, lift the cookies onto a cooling rack to cool. Makes 16 cookies.
